I have talked about Sidu before on my blog. Managed to eat the awesome stuff again at Naldehra. If you start waking towards the golf grounds from the Chalets side, you come to a pond where the Pony Man wait for the customers. If you keep walking straight for a little while ahead, you come to a dhaba, and the lady there makes Sidu.
PS. I am still quite down and out. So really sorry all your comments are going without a reply. But let us see that at this rate I can even make to the office on Monday.
First, I thought Sidu is a name and then when I read the post, I knew better. Is it sweet? Also, is it safe to have it from a dhaba? Not that i am being a snob, I am just not lucky when it comes to anything from dhabas and it takes me a week to recover…hence, the question.
Yummy! Was it cooked in desi ghee?

Sidu is easy to make and is better prepared at home. In simple terms, it is a wheat flour ball with rich stuffing. Though traditionally the flour was left to rise for a few hours but you can put yeast and get the same result. Eat it with dal / pulses.
However, you will miss the local flavour if you make sidu at home or take it in a Himachali home outside Himachal. Part of it comes from the procedure and part from the local stuffing and also local setting.
